Vegan Friendly Stuffed Peppers


Lets be honest, we all want to be healthy…so we talk the big talk about how we’re going to start eating healthier…but do we really? Cooking with fresh foods is expensive and time consuming. But when you add the element of cooking allergen free or vegan/vegetarian friendly dishes, that’s where most tap out. Why? These peppers were a game changer. I knew for the longest time that I wanted to make stuffed peppers for dinner, but I wasn’t sure what to put in them. And before I knew it, it was girls night and I needed to bring a dish. Stuffed peppers it was!

The struggle: I had to cater not only to my dietary restrictions, but two of my friends are vegans, and the other two eat anything…and I tell you what – these peppers satisfied everyone’s wants and needs! I hope you find them as easy and as enjoyable as I did, and do :). Enjoy.


Prep Time: 15 minutes

Cook Time: 25 minutes

Oven Temp: 400°F

 

Ingredients:

  • 6 peppers (assorted colors)
  • 2 cups of Instant White Rice
  • 1 small can of diced tomatoes and chilis
  • 1 can of black beans
  • 3/4 cup shredded soy cheese (vegan friendly – use regular if you wish!)
  • Extra cheese for the top
  • 2 tbsp lime juice
  • 1 pinch of cumin
  • Salt, pepper and cilantro to taste

 

Recipe:

  • Preheat your oven to 400°F.
  • Cook your instant rice according to packaging.
  • Rinse your peppers, and cut the top off – leaving a thin rim around the top (see the picture above).
  • In a medium sized mixing bowl, combine your beans, cheese, diced tomatoes, and rice.
  • Stir in the lime juice.
  • Season the stuffing as you feel appropriate.
  • Using a spoon, fill each pepper slightly past the top crest of the pepper.
  • Add excess cheese to the top of the pepper.
  • Place in the oven for 25 minutes, or until peppers start to wrinkle, and your cheese has browned.
  • Serve, and enjoy!
