Perfectly “Pear-ed” Chicken


Change it up in the kitchen! One amazing thing about cooking is that there are no rules! We go about our life with guidelines and rules…but in the kitchen…they disappear. And that ladies and gentlemen, is my favorite thing about cooking. I don’t have to make fried things with wheat flour…I can make it with gluten free bread crumbs, or ground up rice krispies or oats…it’s my playground and I do what I want. This recipe in particular came to my mind as I was sitting in my cubical at work today. Why are apples a choice fruit when pairing something for dinner? I like pears…and I love Chicken. Thus, this creation arose. I hope you like this recipe. Enjoy.


Prep Time: 15 minutes

Cook Time: 25 minutes

Oven Temp: 400°F

 

Ingredients: (2 servings)

  • ~1/4 cup brown sugar
  • 2 tbsp minced garlic
  • 1/2 stick of butter
  • 2 large chicken breasts
  • 2 pears (your choice on the kind!)
  • *Sliced Brie cheese if you wish

 

Recipe:

  • *You will want to make sure you have one chicken breast and one pear per person if altering this recipe 🙂
  • Thaw your chicken in the sink or the microwave (I prefer the sink-under cold water to eliminate pre-cooking of the chicken)
  • While your chicken is thawing, you can cut your pears into slices and add them to a frying pan.
  • You will want to add half of your butter to the frying pan, along with 1 and a 1/2 tbsp of brown sugar. (Let the pear slices sautee until tender, but still firm)
  • Place your pears in a dish to the side.
  • After your chicken has thawed, you should trim it according to your likes.
  • Once trimmed: add the chicken, remaining butter, all except for 2 tbsp of brown sugar, and your minced garlic to the frypan that you just cooked your pears in. This will allow all flavors to blend nicely…and it saves on dishes!
  • Let your chicken cook in all of the flavors until both sides of the meat are white.
  • Remove the chicken and place it on a baking sheet, add the remaining brown sugar as a coating on top.
  • Then pop them in the oven for 10-15 minutes or until thoroughly cooked.
  • Remove the chicken from the oven, and serve it on a bed of your carmelized pears.
  • * I added a layer of brie between my pears and chicken, and it pulled everything together nicely.
