Crockpot Mexican Chicken

Crockpot Mexican Chicken

Are you a busy Mom, a college student with no time to cook, or simply just love using your crockpot? I know I love mine! And this is one of the easiest and most delicious crockpot recipes that I know. The prep time is very minimal which makes it super easy to throw in the crockpot 10 minutes before you leave the house for the day…and when you return…BOOM! Crockpot Mexican Chicken!

*Disclaimer, I usually try to serve mine with rice and a vegetable side. (Corn- when I could have it, and or green beans are my personal favorite sides). Enjoy.


Prep Time: 5 minutes prior

Cook Time: 4-6 hours

Oven Temp: CROCKPOT! – low temp

Ingredients:

  • 1-2 thawed chicken breasts depending on their size for each individual
  • 1/2 cup of water
  • Salt and Pepper to taste
  • *Feel free to add taco seasoning if you wish! I like the extra kick it gives 🙂
  • ~3/4 cup of salsa (your choice on flavor and brand, as long as it covers the chicken completely)

Recipe:

  • Turn your crockpot on low.
  • Season your chicken breasts with salt and pepper and the taco seasoning if you wish
  • Place the chicken into the bottom of your crockpot.
  • Pour in the water just to add moisture for cooking.
  • Then make sure the chicken is covered with your salsa. You may need to add more or less depending on the size of the chicken.
  • Let cook as long as you wish! I usually leave it in while I’m at work.
  • When I get home I make the classic minute rice, and sauté some veggies.
  • Remove the chicken from the crockpot, serve over the rice with some added salsa on top, and enjoy :)
