Why I’m “Cookin’ With Allergies”
My hope is that after you visit this site, you want to check it out in the future. That’s what all bloggers hope for right? I however am not doing this for followers, or fame…I’m making this blog to educate people and to give others like me who suffer from food allergies, a fun blog to discuss recipes and cooking skills. Or simply a blog for people who love to cook!
Since January 1st 2015, I have been living my life allergen free. I had been sick for months and it was time to make a change…so after being allergy tested I cut out my allergens. (Easier said than done might I add) I am allergic to wheat, corn, clams, and sesame. Some have said, oh it can’t be that hard…just buy Gluten Free things. The catch, gluten free products are often substituted with corn. Not to mention that with all of these allergens, there are by-products that also can cause allergic reactions. It’s important to do the research and find out all of the factors that can trigger reactions so as to be the healthiest version of yourself. Thus, my list expanded to the following: wheat, corn, clams, sesame, maltodextrin, xanthan gum, powdered cellulose, citric acid (unless in a fruit oriented product), and I am cautious with caramel coloring and natural and artificial flavorings.
My life has completely transformed into cooking 90% of my meals from scratch. So why not share my new found knowledge about cooking with the world! Especially if it can help make someone else’s life easier.
